Sevenhill was established in 1851 when the Jesuits who settled in the area planted vines to produce sacramental wine. From these modest beginnings, the Jesuits' focus on wine has remained, with Sevenhill adding to its sacramental wine production with an extensive range of table wines that are highly regarded throughout Australia and overseas.

Sevenhill Merlot is a deeply coloured, full-bodied wine. Our approach is to take low-yielding and intensely flavoured fruit and extract the silky rich tannins through small-batch fermentation.

Each block was picked separately and fermented in stainless steel, with regular pump overs to maximise flavour and colour. After pressing, the wine was matured in French oak for 18 months.

This is a deep and brooding Cabernet with a dark ,black cherry hue. The aroma is rich with cigar spice and chocolate. Powerful blackcurrant fruit carries through the long palate underpinned with unmistakably high quality tannins, typical of this Cabernet in the Clare Valley.

Our Grenache comes from sturdy stock, so it’s no lightweight. The grapes are from 80-year-old,dry-grown vines that have a western aspect where they receive a healthy dose of afternoon sun. These vines are spur pruned and traditionally give a low yield. They are picked at high sugar levels to concentrate the variety’s berry character.

The fruit is crushed to a static fermenter and cold soaked for six days. After seeding with yeast, it is fermented for a further five days before pressing.

Sevenhill's vineyards are planted on gently undulating slopes up to 500m above sea level. Warm days and cool nights during the growing and ripening season are perfect for Riesling, as is the combination of stony and richer, red loam soils.

After timely rain during a dry spring and summer, mild temperatures and continued dry conditions saw the vines race to ripeness. All our Riesling was in the winery before the harsh heat began in mid-March.

Winemaking aims to protect and maintain the character developed in the vineyard. The fruit is gently pressed, taking great care not to allow oxygen to steal the flavour. The juice is kept very cool and yeast selection is critical during fermentation.

Sevenhill Fine Old Tawny is grown on old Grenache, Touriga and Shiraz vines. The yield from each vine is very low as a result of pruning to achieve minimal bunches of concentrated flavour.

Each variety is managed separately and fortifying spirit is added to arrest the fermentation and keep the natural grape sugars (glucose and fructose) in the wine. Each year, the winemaker creates a blend from young and old wines that have been kept in large oak barrels.

The 2008 is a blend of Cabernet Sauvignon (56%), Merlot (19%), Malbec (19%) and Cabernet Franc (6%). Fermentation on skins lasted between 10-14 days, capturing intense extraction of colour and flavour. Ageing was undertaken in a combination of old and new French oak.

Deep red with a purple hue, the aromas are loaded with sweet red berry fruits. The palate has abundant lifted fruit 鈥?Blackberries and plum from the Cabernets, with spice from the Malbec creeping through.
