From these modest beginnings, the Jesuits' focus on wine has remained, with Sevenhill adding to its sacramental wine production with an extensive range of table wines that are highly regarded throughout Australia and overseas.

澳大利亚葡萄酒堪称葡萄酒新世界的代表之一,在澳大利亚,分布着南澳、新南威尔士、维多利亚和西澳四大葡萄酒产区,近九千家葡萄酒酿造厂。其中,南澳以得天独厚的优良环境成为澳洲最重要的葡萄酒产区,大部分的葡萄园集中在阿德莱德、南谷、河地等区域。
澳天露酒庄拥有朗汉溪和阿德莱德山等多处优质葡萄庄园。

早在1860年,南澳朗汉溪地区就已成为优质葡萄酒原产地。这一带的气候出奇的凉爽,夏季日照总热度又可高达1450度。这片沙漠中的绿洲位于阿德莱德东南方向约70公里处,毗邻亚历山德里娜湖,湖水静静流淌,汇入南大洋,因此当地的气候神奇而又变化莫测。几个世纪来由洪水作用从阿德莱德群山冲击而下的肥沃土壤把这里的葡萄养育得格外优良。古老而又典雅的枫香树静静矗立在河的两岸,为这里的平原三角洲平添了几分神秘。澳天露酒庄坐拥朗汉溪100公顷的葡萄庄园,声名远扬的希拉、赤霞珠、苏维翁等优质葡萄就产自这个庄园。 
而位于阿德莱德群山中心林丛处的葡萄庄园,面积达40公顷,其独特的420m高海拔、冬季充沛的降雨量以及凉爽的夏季气候使得山上所出产的葡萄个个品质优良。几百年来由雨水冲刷而下的浅层页岩土为园内精产葡萄酒提供浓香扑鼻的葡萄原料。该地区漫长而又凉爽的成熟期,外加可低至3~4度的夜间气温,使得这里的葡萄粒粒充盈浓郁的醇香。这就是澳天露酒庄霞多丽和白苏维翁美酒的源泉。

现代化的酿酒工艺和设备
在澳天露酒庄,从葡萄种植到酒品酿造,均在葡萄庄园内一气呵成,以确保我们能够对产品进行“从葡萄园到酒瓶”的全程监控。
所有的废液和废水皆保留在垫有塑料内衬的防污池内,以防任何污水渗透到宝贵的地下水。而这些污水会被过滤有害化学成份及盐分后,直接循环利用,成为葡萄园的灌溉用水。
同样,所有的固体污染如果皮、茎杆、果核会被送回葡萄园作为土壤肥料使用以改善土质、增加土壤肥力,并能直接降低25%的灌溉需求。 
对于我们的葡萄园来说,最大的困扰莫过于那些啄食葡萄后使果实腐烂的小型鸟类,而我们所采取的对策是驱赶,而非灭杀。在葡萄成熟期内,我们在园内撒下一些动物肝脏以诱引鹰群到园内来,这样,那些小型鸟类自然就不敢再出现了。

澳天露酒庄拥有一批精心敬业、技术高超的酿酒师,每一瓶澳天露葡萄酒如同他们心目中的艺术品。正是酿酒师们自始自终坚持“极致入微地品酒、调酒、检酒”的原则,确保了澳天露美酒品质的持续可信度。

在阿德莱德,有一个国际知名的Maglieri葡萄酒厂,上世纪末在英国伦敦召开的国际葡萄酒挑战赛中取得了轰动性成功,其“希拉葡萄酒”多次击败所有参赛对手,被誉为引领世纪葡萄酒业的发展。澳天露酒庄高级酿酒师Scott McIntosh先生的酿酒技术正是研习于Maglieri酒业的黄金鼎胜时期。
Scott先生1992年开始他的酿酒生涯,凭借上述经历很快享誉澳大利亚酿酒业。他对酿酒细节的一丝不苟和全情投入使其所酿酒品的上乘质量得以持续保证,在他的世界里没有“马虎”,没有“将就”,无疑,他是一个完美主义者。
酿酒师Rob 先生,早在1974年就已进入葡萄酒制造业,并于1998年加盟澳天露酒庄。Rob先生对全球制酒业的通透了解及丰富的行业经验使其参与的企业一直屹立于澳洲制酒业的前列。
酿酒师Justin Coates先生,作为Scott先生的高级助手,表现出非凡的酿酒天分,2006年获得澳洲酿酒业顶级荣誉------澳洲酒协会会员大奖,并因此成为澳大利亚十大年轻顶级酿酒师。
Winery:
Designed to use the most modern winemaking technology, StepRd winery was built with dual goals; wine quality and environment protection.Once seen, never forgotten, its layout and operation were designed for efficiency and resource, and to be mindful of the occupational health and welfare of the staff, and the environment.All liquid waste and wash water is stored in plastic-lined dams to prevent seepage into the precious water table, before being treated to remove damaging chemicals and salinity, then re-cycled as irrigation on the vineyard.Similarly, all solid waste of skins, stalks and seeds are mulched and returned to the vineyard to enhance and improve the soil, as well as reducing the irrigation requirement by up to 25%. Step Rd Winery is not only the pinnacle of winemaking quality, but is at the fore-front in the conservation of the environment and that extremely valuable and diminishing resource, water.
Vineyards:
The classic combination of high altitude - 420m above sea level - high winter rainfall and cool summers, produce fruit of supreme excellence from the Adelaide Hills. Situated at Woodside in the heart of the Hills, this vineyard of 40ha supplies the Sauvignon Blanc and Chardonnay for the Step Rd premium varietals. Shallow, shaly soils, washed by centuries of rainfall, ensure low yielding vines, with intensely flavoured fruit. Long, cool ripening periods, with night-time temperatures as low as 3-4oC, allow fruit flavours to develop and concentrate to their optimum level. Showing elegance and finesse, undoubtedly this region produces some of Australia?s finest quality white table wines. Classical creations which will be long remembered for their sheer artistry.
Established as a premium wine-grape producing region as far back as 1860, this spectacular area is surprisingly cool, with a summer heat summation of about 1,450 heat degree days. This oasis, some 70 km south-east of Adelaide, has some marvellous tempering climatic influences from its proximity to Lake Alexandrina, which opens onto the Southern Ocean. The grape quality is enhanced by deep, rich alluvial soils, washed down by floods from the Adelaide Hills over the centuries. Ancient, graceful gum trees line the rivers and add an eerie personality to the flat delta. Home to the Step Rd Winery and Vineyards, the 100 hectare Estate produces Sangiovese, Shiraz and Cabernet Sauvignon, which make up the Step Rd premium range.

Rob Dundon became involved in the creation of Step Rd Winery in 1998 having commenced his winemaking career in 1974. Rob?s experience and knowledge of the global wine markets has kept him at the forefront of the Australian Wine Industry.Scott McIntosh learned his craft at Maglieri Wines during their gold medal and trophy winning years of the 1990?s.Scott?s dedication and attention to detail ensures that quality is consistently delivered.It is second nature for our winemakers to taste, blend and check on the smallest detail to guarantee the delivery of a reliable wine every time. |
